Shani's Breakfast Bake

Ingredients

Olive Oil
2-3 Sliced Red Potatoes
6 Beaten Eggs
1/2 Cup Fresh Raw Spinach
1/4 Cup Diced Scallions (Green Onions)
1/4 Cup Diced Onions
1/4 Cup Diced Mushrooms
1/4 Cup Dice Red Bell Peppers
2 Cups Cheese

Directions

Preheat oven on 350 degrees.
Slightly oil the bottom of a 9x9 glass baking dish.

Layer potato slices evenly along the bottom. Pour eggs on top. Layer with spinach, scallions, onions, mushrooms and red bell peppers.

Cover with foil and bake 30-40 minutes, until potatoes are tender (use a sharp knife and poke through to see if potatoes are tender).
Uncover and top with cheese. Recover (tenting foil). Bake 20 minutes. Remove foil bake another 10 mins for a nice golden top.

Let stand for 10 minutes...Enjoy

* I make a lot of meals that are vegetarian; however, some people prefer to have some form of meat. If you would prefer to add meat, chop up some turkey bacon (or any bacon of your choosing) and cook it in a skillet, then sprinkle it as an additional layer on top of the eggs. I have made this recipe with both turkey bacon and turkey sausage and the turkey bacon was much better; the sausage made it salty. However, I prefer to keep it vegetarian and if anyone wants meat I serve it on the side.

*Just double the recipe to make a bigger serving and make sure to use a bigger baking dish.

**UPDATE 05/03/2017** My original recipe did not include red bell peppers. After making it with them, I have updated the recipe because it was so delicious.
