Sunday Dinner - Cream of Mushroom Chicken & Mashed Potatoes
Ladies & Gentlemen sometimes we need a little help in the kitchen. I like to share easy meals that will please that special someone in your life and make you look like a great cook even if you aren't. They are easy and quick!
Tonight’s Dinner is: Cream of Mushroom Chicken & Mashed Potatoes
Cream of Mushroom Chicken
Put chicken legs in glass baking dish. Top with sliced onions (optional). Bake uncovered for 45 minutes. Chicken should be brown. In a separate pot pour 2 cans of Cream of Mushroom soup; add 1 can of milk. Cook on medium high until it bubbles. Make sure you stir so it is creamy.
Pour all of the soup over the chicken and cover with foil. Bake for 45-60 min.
Mashed Potatoes
I said this would be easy meals so I will provide 2 options.
Option #1 -Buy a box of potato flakes and prepare to manufacturers recommendations.
Option #2 -Skin five medium to large potatoes, cut potatoes in four pieces. Put potatoes in a medium pot of water; Let boil. Take a sharp knife to see if the potatoes are soft. If no, allow to cook until they are. If they are; drain the water. With a potato masher; mash the potatoes, add 1 cup of milk, ¼ tsp of butter, 1 cup of sour cream. Mix with a fork or my fav…a mixer. Until smooth.
Get a large pot and fill ¼ with water. Place pot of potatoes inside of larger pot and boil on high. Stir occasionally.
When preparing your plate spoon soup from chicken over mashed potatoes…yummy!
