Sunday Dinner - Cornish Hens, Cabbage & Cornbread
Ladies & Gentlemen sometimes we need a little help in the kitchen. I like to share easy meals that will please that special someone in your life and make you look like a great cook even if you aren't. They are easy and quick!
Tonight’s Dinner is: Cornish Hens, Cabbage & Cornbread
1 or 2 Cornish Hens
Olive Oil
1 Head of Cabbage
½ Chopped Onion
1 Box of Jiffy Cornbread Mix
Small can of corn
Directions
Cornish Hens
Rinse the Hens, rub a little Olive Oil all over the Hens, sprinkle with seasonings of your choice. Put about ½ cup of water in the bottom of the pan. Put in oven on 375 degrees for about an 45 min-an hour. Skin should be golden brown.
Cabbage
Chop 1 head of cabbage (not the stem), put cabbage, ½ chopped onions, a teaspoon of salt, teaspoon of pepper, teaspoon of crushed red pepper, and teaspoon of sugar w/2 cups of water in a large pot and cook on medium high heat until tender.
Cornbread
Follow the directions on the box but add the corn. (I also add a little sugar and melted butter). Cook following the directions on the box.
