Shani’s Sweet Potato Pie 2
Ingredients
3 large baked sweet potatoes
1 cup brown sugar
1/2 stick melted butter
2 eggs
1 teaspoon pure vanilla extract
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup evaporated milk
1/2 cup sweetened condensed milk
2 9-inch unbaked pie crusts
Directions
Preheat the oven to 350 degrees F. Wash sweet potatoes and cover in oil, pierce 4 times with a fork, wrap sweet potatoes (Yams) individually in foil and bake for 1 ½-2 hours.
When done peel the skin off the sweet potatoes (Yams), while hot, combine the baked sweet potatoes(Yams), the sugar, the butter, eggs, vanilla, salt, and spices. Using an electric hand mixer, Mix thoroughly. Add the milk and continue to mix until smooth.
Pour the filling into the pie crusts and bake on 350 degrees for 60 minutes, or until a knife inserted in the center comes out clean.
Note: Pie will puff up while hot, it will deflate once it is cool
If your mix seems too thin, let the pie sit in the refrigerator overnight before baking
