Stuffed Cabbage Rolls


 
I had been wanting some cabbage rolls forever! Finally I decided to make some for dinner. These were so yum that I had to share with you. Next time I'm going to add some shrimp, crab or maybe some vegan meat .

Ingredients

1 Medium Head of Cabbage

½ cup of Chopped Sweet Peppers
1 ½ cups Pasta Sauce
½ cup Cooked Quinoa
¼ cup Scallions
¼ cup Mushrooms
1tbsp Minced Garlic
¼ cup Sweet Onions
1tsp Italian Seasoning
1tsp Lemon Pepper
1tsp Paprika
1tsp Crushed Red Pepper
Sea Salt & Pepper to taste

Directions

Preheat oven to 350 degrees.

Cook quinoa according to package.

Chop mushrooms, onions, scallions, and garlic (you can add any other veggies and ground meat you like) and add to a bowl. Add quinoa, ½ cup of pasta sauce and seasonings and mix.


Steam entire head of cabbage until tender; if you are unable to steam the cabbage you can boil it. Once cabbage is cooked submerge into a pot of cold water.
 

Peel off cabbage leaves one by one; cut the stem out of each leaf. Spoon mix onto each leaf and roll like you would a burrito (tuck in the sides). Place the end side down in a baking dish.

Pour the remainder of the pasta sauce on top. Cover and bake for an hour.

Prep Time: 20 minutes
Total Time: 1 hour 20 minutes
Servings: 8

Note: You can use all fresh ingredients instead of canned/jar items if you choose. Also, if vegetarian isn’t for you, add meat.
