Shrimp and Grits Dressing

I do not eat traditional dressing because I have just never liked it. I came across this recipe online. I think this will be added to my dishes for Thanksgiving. I wanted to share with you all.

Shrimp and Grits Dressing

1 pound peeled, medium-size raw Shrimp
1 splash of Cooking Sherry
2 cloves of Garlic, minced
1 tsp of Old Bay Seafood Seasoning
1 tsp Sea Salt
4 cups Chicken broth
1 tsp of Sea Salt
1 tsp of ground Black Pepper
1/2 tsp of crushed Red Pepper
1 1/2 cups uncooked regular Grits
1 cup of Butter
4 large Eggs, lightly beaten
1 Red Bell Pepper, diced
1 Green Bell Pepper, diced
1 1/2 cups of fine, dry Breadcrumbs
1 1/2 cups of chopped Green Onions
1 cup of grated Parmesan Cheese

Preheat oven to 325 degrees. Devein shrimp, if desired.

Mix Shrimp, Sherry, Garlic, Old Bay & Salt in a small bowl and set aside.

Add the Broth, Sea Salt, Black Pepper and crushed Red Pepper to a large saucepan over medium-high heat and bring to a boil.
Whisk in Grits and return to a boil; reduce heat to low.
Stir in Butter, cover and simmer, stirring occasionally for 10 minutes or until liquid is absorbed.
Remove from heat.
Mix together Eggs and remaining ingredients in a large bowl.
Gradually stir about 1/4 of hot grits mixture into egg mixture;
Now, add egg mixture to remaining hot grits mixture, stirring constantly.
Spoon Shrimp into mixture and stir in Shrimp until well blended.
Pour grits mixture into a lightly greased 9x13 inch baking dish.

Bake uncovered at 325 degrees for 55 minutes to 1 hour or until mixture is set. Let stand 10 minutes.
