Shani's Oatmeal Pancakes


I wanted to share a recipe I came up with as an alternative to traditional pancakes. I found a pancake recipe and tweaked it completely. These pancakes are 1/3 the calories of traditional pancakes.

Ingredients


1 cup of Oatmeal Flour (ground up oatmeal)
2 tablespoons of Brown Sugar
1 teaspoon of Sea Salt
2 teaspoons of Baking Powder
1 Egg, beaten
2 tablespoons of Unsweetened Applesauce
1 cup of Unsweetened Almond Milk
1 teaspoon of Vanilla
Directions
1. In a large bowl, mix flour, sugar, baking powder and salt.
Mix milk, egg and applesauce in a separate bowl.
Make a well in the center of your dry ingredients and pour your wet ingredients into the well.
Mix until smooth.

2. Spray canola oil on a griddle of frying pan over medium high heat. Pour or scoop the batter onto the griddle or pan, using ¼ cup for each pancake. Brown on both sides and serve hot.
