Shani's Spinach and Artichoke Dip

Ingredients

1 16oz bag frozen chopped spinach
2 (13 3/4-ounce) cans artichoke hearts
12 ounces cream cheese
1 cup sour cream
1 cup mayonnaise
1 cup grated Parmesan
1/2 teaspoon red pepper flakes
1/4 teaspoon onion powder
1/4 teaspoon garlic powder
2 cups grated pepper jack cheese
1/8 cup of diced red onion

Directions

Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.

Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor. Heat cream cheese in microwave for 1-2 minutes or until hot and soft.

Combine all the ingredients except the pepper jack cheese and red onion in a large bowl. Stir well. Scrape into the casserole dish and smooth, sprinkle the pepper jack cheese on top, then sprinkle red onion in the middle.

Bake for 30 minutes.
