Shani's Garlic Mashed Red Potatoes


Last night the hubby, the kids and I had a yummy family dinner that consisted of lobster tails, garlic mashed red potatoes and sautéed squash and zucchini. My potatoes weren’t your average mashed potatoes; I of course had to add a Shani spin on them.

I hope you enjoy as much as my family did.

Ingredients

6 medium-large Red Potatoes
4 tablespoons of Melted Butter
2 tablespoons of Minced Garlic
1 cup of Yogurt Sauce (directions below)
2 teaspoons of Sea Salt
1 teaspoon of pepper

Directions

Cut the potatoes into fours, sprinkle 1 teaspoon of sea salt in water. Boil in a large pot on high until soft.
Boil garlic in a small saucepan, sprinkle one teaspoon of sea salt in water.
Drain potatoes and garlic.
In a large bowl add unpeeled potatoes, butter, garlic, pepper and yogurt sauce. Mash until you reach your desired consistency. Enjoy

Yogurt Sauce

Ingredients

1 cup Nonfat Plain Yogurt (I use Greek)
½ Lemon
½ cucumber
1 tspn of dill

Directions

Chop cucumber into tiny pieces (use chopper if you have one. Look under label “kitchen Gadgets” for more info)
Mix nonfat plain yogurt, squeeze lemon completely into yogurt. Add dill & cucumber and mix thoroughly until creamy.
