Sunday Dinner: Shani's Chicken & Broccoli Alfredo Bake


 
Ladies and Gentlemen sometimes we need a little help in the kitchen. I like to share easy meals that will please that special someone in your life and make you look like a great cook even if you aren't. They are easy and quick!

Tonight’s Dinner is: Chicken & Broccoli Alfredo Bake

Ingredients

1 box of Penne Pasta (I used Multi-Grain)
1 Bag of Grilled Chicken Breasts
4 Cups of Fresh Broccoli Crowns (2 large trees) or 1 bag of frozen.
1 Jar of Alfredo Sauce
3 Cups of Mozzarella Cheese
1/8 Cup of Parmesan Cheese
1/2 Cup of Feta Cheese (Optional)

Directions

Cook pasta per package instructions. Drain Pasta when tender & rinse w/cool water.


At the same time pasta is cooking; in a large skillet heat up chicken breasts until thawed out (do not overcook).

Chop the stems off of the broccoli so only the crowns are left, cut/chop each crown so that they are separated (they will look like small trees), rinse. Add broccoli to a pot of boiling water for two minutes (I used the left over pasta water); quickly remove.

In a large bowl mix the pasta, chicken, broccoli, (I also added a few sprinkles of parmesan cheese) and Alfredo sauce (add a little water to the jar to get the excess sauce and add to the bowl) and Any Seasonings You Desire. Mix until everything is fully covered with Alfredo sauce.

Pour all ingredients into a large glass baking dish, spread it all evenly.

Top with mozzarella, parmesan and feta cheese.

Bake on 350 degrees until mozzarella cheese has melted.
