Stuffed Mushrooms


 
I still had some of the mix left over from the Stuffed Peppers I made the other day and decided I would use the remaining mix to make some stuffed mushrooms. Even though I posted the ingredients on my stuffed peppers post I am going to post them here. I will cut the ingredients in half.

Ingredients

20 Whole White Mushrooms
¼ cup Spaghetti Sauce
¼ cup Cooked Quinoa
½ cup Fresh Spinach
1 ½ diced Tomatoes or ½ 14oz can
1/8 cup Scallions
½ tbsp Minced Garlic
1/8 cup Red Onions
½ cup Shredded Mozzarella Cheese
½ tsp Italian Seasoning
½ tsp Lemon Pepper
½ tsp Paprika
½ tsp Crushed Red Pepper
Sea Salt & Pepper to taste
1 cup Shredded Pepper Jack Cheese

Directions

Preheat oven to 400 degrees.

Cook quinoa according to package.

Remove the stems from the mushrooms and scoop out the middle using a spoon and set aside.

Chop onions and mushroom stems in a food processor. On medium heat, sauté chopped mushroom stems and onions until tender.

Mix spaghetti sauce, quinoa, spinach, tomatoes, scallions, mushrooms, garlic, onions, Italian seasoning, lemon pepper, cayenne pepper, crushed red pepper, sea salt and pepper and mozzarella cheese in a large bowl.

Spoon the mix into each mushroom and place in a backing dish (stem side up). Bake in the oven on 400 degrees for 15 minutes. Remove from heat and sprinkle pepper jack cheese on top and cook and additional 10 minutes

Servings: 20

Note: You can use all fresh ingredients instead of canned/jar items if you choose. Also, if vegetarian isn’t for you, add meat.
