Shani's Taco Bowls (vegetarian)


Ingredients

Whole Wheat and Black Bean Tortillas
Spring Mix
Vegan Meat Crumbles (or any ground meat)
¼ cup of Onion
1 tablespoon of Minced Garlic
I cup of Black Beans
Pepperjack cheese
Salsa
1 cup Greek Yogurt
1 Tablespoon of Fresh Lemon Juice
1 teaspoon of Dill


Directions

Bake tortilla using tortilla bowl makers.
In a skillet heat meat, onions, and garlic until onions are translucent and meat is cooked
Boil black beans until they are hot
In a small bowl mix Greek yogurt, lemon juice and dill and mix; set aside
In your tortilla bowls layer spring mix, meat, beans, cheese, salsa and yogurt
