Shani's Breakfast Bake 2

Ingredients
1 Package of Biscuits
6 Beaten Eggs
1/2 Cup Fresh Raw Spinach
1/4 Cup Diced Scallions
1/4 Cup Diced Onions
1/4 Cup Diced Mushrooms
2 Cups Cheese
Olive Oil


Directions
Preheat oven on 350 degrees.

Drizzle a small amount of olive oil in a skillet (not needed if using a non-stick skillet) add onions and mushrooms until onions are soft and translucent.

Slightly oil the bottom of a 9x13 glass baking dish with olive oil or other cooking oil.
Flatten the biscuits and cover the entire bottom of the dish.
Pour eggs on top. Layer with spinach, scallions, onions and mushrooms.
Cover with foil and bake 20 minutes.
Uncover and top with cheese. Bake additional 15 minutes. Enjoy

*NOTE if the crust hardens pour a little hot water in the bottom of the dish and allow it to soak it up

*UPDATED 12/04/16 - I had to revamp this recipe by precooking the veggies that take longer to cook reducing the time in the oven and preventing the biscuits from over cooking.
