Keto Friendly Parmesean Crusted Chicken


This is one of my favorite meals at BJs. I've been wanting to make it at home for a while now. The original recipe calls for a 1/4 cup of chardonnay lemon sauce but I didn't have any so I used 1/8 cup of vodka and I really liked the sauce, plus vodka is carb free so it was a win/win. However,  you can omit the alcohol altogether and it should be just fine.

Ingredients
1 lb Chicken Breasts (2 large pieces)
1/2 tsp Garlic Powder
1 tsp Italian seasoning
1/2 tsp Salt
1/4 tsp Pepper
1 Egg
1/2 cup Parmesan Cheese, shredded
2-3 tbsp Olive Oil 

Instructions 
Place the chicken breasts out on a cutting board, and cut in half horizontally into two thin pieces. Season both sides with garlic powder, herbs, salt, and pepper; Set aside. 

In a shallow plate, whisk the egg. In another shallow plate, place the Parmesan. 

Dip each chicken cutlet into the egg. Press the chicken into the Parmesan cheese to coat. Flip and coat the other side. Repeat with the remaining chicken pieces. 

Heat the oil in a large non-stick skillet over medium heat. Place the chicken in the pan in a single layer, do not move them around. Cook for 4-5 minutes on each side until golden and crispy.

Lemon Vodka Butter Sauce 

Ingredients
1⁄4 cup Butter
1⁄8 cup Vodka *optional
2 tablespoons fresh Lemon Juice
1 teaspoon Keto friendly sweetener
1 dash of Salt
1 1⁄3 cups Heavy Cream 

Instructions 
Make vodka butter sauce by melting butter in a small saucepan over medium heat. Add vodka and simmer 1 minute. Stir in lemon juice, sweetener, salt and add cream. 

Simmer on low heat for 10-12 minutes, until thickened.
